Dill<br \/>\nEvtl. 0,1 l Essig<\/p>\n<p><strong>Zubereitung:<\/strong><\/p>\n<ul>\n<li>Wein, Wasser, Salz, Pfeffer, Lorbeerblatt, Zwiebelringe und Porreescheiben (+ evtl. Essig und Dill) 10 min. kochen.<\/li>\n<li>Forellen unter flie\u00dfendem Wasser absp\u00fclen. Dabei darauf achten, dass der Schleim nicht abgesp\u00fclt wird (er sorgt f\u00fcr die blaue Farbe).<\/li>\n<li>Die Forellen vorsichtig in den Sud legen und 6-10 min. (je nach Gr\u00f6\u00dfe) ziehen lassen. Nicht kochen!<\/li>\n<li>Vorsichtig herausheben, der Fisch bricht leicht.<\/li>\n<\/ul>\n<ul>\n<li>Mit Zitrone, geschmolzener Butter und Meerrettich (evtl.
